Food/Coffee Pairing = Success!
On May 22nd Johnson Brothers and Birdies Café teamed
up for another awesome Food and Coffee Pairing. Before the pairing began
we had an impromptu Latte Art session with the Manna Cafés
Trevor Gruehn. The Latte Art was fun for the staff and Johnson
Brothers and got us warmed up for the Food and Coffee pairing part of
the evening. (See images that follow)
With the help of Trevor and Birdies Baristas Julia Miller,
Margaret McCormack we started the evening out with a Tasting Exercise
discussing common brewing issues and how those affect flavor. From
there we moved into the Food/Coffee Pairing portion of the evening.
The Menu consisted of:
1st Course: Sumatra Blue Batak with Portabella Mushrooms in a Teriyaki
Sesame Sauce over Rice with a Garlic Cream Sauce
2nd Course: Iced Fair Trade Organic Honduras Marcala Santa Rosa with
Bruschetta Chicken over Mixed Greens and a Balsamic Vinaigrette
3rd Course: Kenya Eaagads with Salmon Quiche and Capers, Cucumber
and Dill Salad
4th Course: Ethiopian Adado with Chocolate Mousse with Whipped Cream
and either a Raspberry or Strawberry topper.
All the food was prepared by Birdies owner Sarah Buzzell with
help from Margaret McCormack. There was a lively discussion about
the perils within the Specialty Coffee Industry. What Johnson Brothers
is trying to do to bring Specialty Coffee into a new arena around
the Mid-West and how to enjoy coffee in different ways under different

The Dane County Farmers Market continues on the Madison Capitol Square
each Saturday.. The Johnson Brothers coffee cart is alive with the smells
of steamed milk, fresh brewed coffee and single origin espresso shots.
The ring of Double Skinny Latte's, Iced Mochas "Getting It,"
and Double Spro Shots; was music to our collective ears.
Please come down on Saturdays from 6 a.m. to 1:30
p.m. and see your favorite Johnson Brother's baristas at work.

At sunrise on opening day of the Dane County Farmers Market
two weekends ago, a few vendors unloaded trucks in the shadow of the
State Capitol. I was first in line at the Johnson Bros. Coffee Roasters,
one of dozens of popular vendors that set up shop across from the Capitol
Square (the grounds of the square itself are reserved for farmers hawking
their goods).
Soon, early birds joined me.
"It's been a while," the barista said to a woman
with a canvas bag -- good for carrying produce -- slung over her shoulder.
She smiled and nodded. "You're off your crutches," he said.
"Next?"
